What you know
- Bacteria grow fastest between 5 °C and 63 °C. Cold food: 5 °C or below. Cook poultry to 75 °C in the centre.

- Be fair: say what he did right too.
Success looks like
- Temperatures — You know the danger zone.
- Time — Nothing sat out too long.
- Fair coaching — You recognised good practice.
